Corn Dogs & Car Bomb Cupcakes

This was a pretty awesome weekend.  My only real complaint is that it’s over.  But that’s OK, because next weekend I’m headed back to the ATL!

The Pink Palace’s inaugural party went well.  As in the cops that practically lived on our corner didn’t show up and our house was not trashed.  Oh, and I think we all had a pretty great time.

Also, my cupcakes were a hit.  I posted the blog I found them on earlier in the week, but I think the recipe is originally from Smitten Kitchen.  It’s all over the internet and I think quite a few of people have made them this year, which of course gave me all the more reason to make sure mine were the tastiest/prettiest/all around best version.

I dug a much bigger hole out of the center than the pictures in the recipe showed; this had two glorious effects: more Jameson ganache in each cupcake and left over Guinness "brownie bites"

I actually didn’t really do much differently besides always using the upper end of the suggested range for the alcohol (actually there were 5 tablespoons of Jameson, but that’s just because of my neurotic dislike of even numbers, not because I’m an alcoholic).

My mom asked me to save her one, to which I responded she would have to be one of the first 20 people to my party if she wanted a cupcake.  Well, she was, which was pretty awesome; she got a cupcake and Matt got to try one of Courtney’s home brews, which also got rave reviews, despite his continued request for criticism.  Maybe we’ll retire early and start up a bakery and brewery hybrid.

We had to make a quick recovery because Saturday was National Corndog Day, and we had to be on our game.  Luckily four tylenol and a five mile run later I was ready to go.

Courtney made a respectable attempt at the triple-double (10 corn dogs, 10 beers and 10 units of 10 tator tots) putting down the 10 corn dogs early in the game, but ultimately his dislike for potatoes got the best of him.  Maybe next year.

We also did a pretty nifty recreation of the Last Supper for the PRB Corndog Day photo contest, so maybe a prize in the shape of a mini fridge will be in the works:
