Five-Minute No Bake Chocolate Cake for One

I’m all about cooking healthy meals, but when it comes to dessert I generally fall into the “knock your socks off, high-calorie  (and possibly with bacon-laden) in moderation” camp than the “fat-free, sugar- free, this doesn’t taste all that bad and I can have five servings for the price of one” camp.  But I don’t always have the time and motivation to make the former, nor to I necessarily need to have an entire batch of Bacon Salted Caramel Brownies sitting around my house.  So when I saw this “One-Minute Chocolate Cake!” I figured it was worth a try.

I was hesitant about trying another recipe from this healthy dessert blog because the peanut butter cookies I tried last week went so horribly.  But I had five minutes to risk and all the ingredients on hand.  The result was not something that I would bring to a friend’s birthday, but for a healthy, quick dessert for one that you can make on a whim on a weekday night, this definitely didn’t disappoint.

For One:

  • 1 tablespoon plus 2 tsp cocoa powder
  • 3 tablespoons spelt flour (or white, or even peanut flour)
  • 1/8 tsp salt
  • 2 tsp sugar
  • 1/4 tsp baking powder
  • 3 splenda packet (or 2 more tablespoon sugar)
  • 1 tablespoon unsweetened applesauce (Greek yogurt works too!
  • 3 tablespoons milk of choice (I used almond milk)
  • 1/4 tsp pure vanilla extract
  • 2 tsp unsweetened shredded coconut

Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Top with coconut. Microwave 45 seconds to 1 minute.

Nutritional Info: 165 calories, 2g fat, 31g carbohydrates, 6.5g fiber, 5.5g protein
