“I don’t want to go shopping” Salted Shortbread Cookies

So Friday night I was waiting for Courtney to get home from his business trip, and I felt like baking (do I sound like an old married lady?  Does that set in that quickly?).  But I didn’t feel like going to the grocery store.  In fact I had already gone to two  corner stores in search of spray butter, to no avail.  I couldn’t believe there was no butter!  God was punishing me for something, clearly.   The last thing I wanted to do was go search for chocolate chips and break an ankle.

So I googled “brownies without chocolate chips” and didn’t have a whole lot of luck.  Finally, I came across these Salted Chocolate Shortbread Cookies that called for eight ingredients I had on hand, and you probably do too.  And the best part?  You can refrigerate the dough for days.  They’re simple and they’re delicious.  The only problem?  If you refrigerate the dough for days, you end up with no dough, because the dough is slightly better than the cookies.  So I decided I better bake the rest tonight.

You can refrigerate the dough for several days... although it looks a bit awkward on the plate in the fridge should you have company.
Made 36 cookies... even though I ate a good portion of the dough!
