Ingredients

Adjust Servings:
2 large ripe plantains sliced
1-2 Tbsp coconut oil melted; olive oil or avocado oil is fine too.
1 medium yellow onion thinly sliced
1 scotch bonnet pepper diced; optional, if you like some heat
1 red bell pepper thinly sliced
1 tsp garlic powder
1 tsp paprika
to taste salt and pepper
5 Large eggs
4 egg whites
1 package chicken sausage Bilinski's spicy mango cajun is awesome in this recipe!

Outside of the international cuisine, I’ve not been sharing many recipes in this space as of late.  I don’t see a lot of value add to sharing my version of something you can find elsewhere, so unless I a) made somewhat substantial modifications to the recipe and b) plan to make it again, I’ve just been sharing the link in my meal plan. Seeing as I’ve made this recipe twice in as many weeks, I think it makes the cut.

I’ve not done a Whole30 in almost two years, but friends often come across the recipes on my blog from the two times that I did. Breakfast recipes can be particularly tricky since we’re so accustomed to eating sweet, grain-based foods for breakfast here in the U.S.  This is a great Whole30-approved, paleo breakfast option and it has consistently been keeping me full until lunch!

I picked up Bilinski’s spicy mango cajun chicken sausage at Yes Market on a whim since we were out of the chicken sausage I usually buy from Costco, and it worked out perfectly with this recipe.  The spicy cajun flavor was just the thing for this Caribbean inspired dish. And since it has no nitrates, nitrites, soy, gluten or sugar – it’s one of the rare packaged sausages you can actually have on Whole30!  I highly recommend this recipe served alongside some fresh slices of avocado.

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Using a sharp knife cut both ends off the plantain. Slit a shallow line down the long seam of the plantain, and remove the peel. Slice the plantains into 1/8" disks. Toss with melted coconut oil and a bit of salt. Place on baking sheet in a single layer and bake for 20-30 minutes or until golden brown, turning halfway through.

While the plantains are baking, heat a sauce pan or cast-iron skillet over medium high heat and drizzle with 1-2 Tablespoon of olive oil. Add the onions and pepper and cook for about 4-5 minutes. Slice sausage and stir into skillet and cook for 4-5 more minutes.

While that's cooking, combine eggs, egg whites and spices in a large bowl. Once the onions and peppers are cooked, stir into the eggs.

Pour mixture into a greased pie pan. Top with plantains and bake for 30-40 minutes, or until eggs are cooked through. You may need to switch to broil for a few minutes at the end, but keep an eye on it to ensure you don't burn the plantains.
