Vegan Chocolate Banana Pudding with Fresh Berries and Coconut Dark Chocolate Drizzle

I don’t know that you can call this dessert “light” since the secret ingredient, avocado, is certainly a high-fat food.  However, unlike the saturated fat from the cream in your typical chocolate mousse, this dessert packs heart-healthy monounsaturated fats and loads of potassium.  It’s also vegan, and according to Courtney “one of the best things you’ve ever made.”  Go ahead and try it out.

Chocolate Avocado Banana Pudding with Coconut Dark Chocolate Drizzle 

Inspired by The Edible Perspective & The Healthy Foodie

Serves 4

Pudding:

  • 2 avocados, ripe
  • 2 medium bananas, ripe
  • 3/4 cup unsweetened cocoa powder
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Additional sweetener, as desired.  I added 5 packets of Splenda.

Combine all of the ingredients in a food processor and mix well.  Top with berries of choice and chocolate drizzle (see below).

Chocolate drizzle

  • 2 tbsp extra dark cocoa powder
  • 2 tbsp coconut oil, melted
  • 1 tbsp liquid honey
