Cheeseburgers in Paradise

Okay so my title is a bit misleading.  But I’ve always been bad at titles, and “feta stuffed turkey burgers and salmon dill burgers in my miniature townhouse apartment” doesn’t have much of a ring to it.  But I have been experimenting with fun burger creations, and our apartment isn’t quite ‘paradise’ but I am slowly getting closer to my not so convert mission to make our house look like the inside of an Anthropologie store.

Last week we started with  feta-stuffed Greek Turkey Burgers with a cucumber-mint yogurt sauce.  I actually wanted to use lamb instead, but no luck at Trader Joe’s.  Also, in keeping with the Greek theme, I decided to use Pita.  The result?  Please don’t look at the photo in the recipe because it puts my creation to shame.  But really, it tasted pretty good.  And we enjoyed the remaining burgers later in the week with cous cous and a big fat Greek salad.

No burger would be complete with out sweet potato fries… Honestly, I googled ‘baked sweet potato fries” and found so many options that I decided to just throw all my favorite spices (cumin, chile powder, onion powder, salt) together.  But I did get the idea from one of the websites  to mix egg white with the olive oil, which actually created a quite tasty batter…  definitely a nice touch!

This week I went with Salmon Burgers.  I used this recipe for the burgers and made a dill cream cheese spread to add to the ciabatta.  Also didn’t have hot sauce, so I subbed a dash of cayenne, chile powder and lemon juice which worked just fine.

There are plenty more burgers I want to try, but if we’re going to keep this pattern up we really should take up our neighbors offer to use their grill!  I’m sure Lila will appreciate the opportunity to play with Murphy.
