13 Ways You’ve Never Thought to Use Cauliflower

Let’s be honest, cauliflower isn’t the sexiest food on the planet.  In fact, I didn’t eat if for years after an STD slideshow presented to our 7th grade Sex Ed class.  True story.  Between that and the poor condom’d banana, they just about toppled the food pyramid!

Cauliflower shouldn’t be associated with disease though… in fact much the opposite!  In addition to being rich in fiber and an excellent source of vitamin C, vitamin K, folate (among many other vitamins and minerals), cauliflower is in  a category of cruciferous vegetables that contain phytochemicals – compounds that may prevent certain cancers by acting as antioxidants, inhibiting enzymes that activate carcinogens and activating enzymes that detoxify carcinogens.

It’s also extremely versatile from a culinary perspective.  It can be used in place of rice in a paleo or low-carb diet, to make soups and sauces creamy without the dairy, as the base of gluten-free bread substitutes for pizza crust and hamburger buns, or to sneakily add vegetables to some of your kids favorite foods.  Here are just a few of my favorite things to do with cauliflower!
