A Simple Picnic Treat: Rye Crostini with Fresh Radishes & Avocado Mash

I have so many awesome recipes to share with you, but sadly one of the numerous broken things in the Johannasphere is my camera.  Well, the camera seems to be alright, but I can’t attach it to my computer to upload photos.  I’ve ordered a card reader, but for the time being some good ol’ phone pix will have to do… because my phone is some lesser degree of broken.

Anyways, this recipe is so simple, but I just absolutely love it!  Granted I could probably eat avocado, cumin and sea salt on toast for lunch every day and be one happy camper, but the radish adds a nice crunchy kick… and makes these so pretty!  I love this on Mestemacher bread because it’s so dense and grainy (any of their selections are great, but I’m a sucker for rye!)  It reminds me a lot of the bread we ate in Sweden (oh, how I miss those little shrimpy sandwiches!)  Anyways, I highly recommend these for your next picnic or garden party… they truly are delightful!

Rye Crostini with Fresh Radishes and Avocado Mash

Ingredients:

    • 1 cup thinly sliced radishes
    • 2 ripe avocados
    • 1-2 tsp cumin
    • Coarse salt & fresh ground pepper, to taste
    • 4 slices Mestemacher Whole Rye Bread

How-to: Toast the bread, if desired.  Meanwhile, in a small bowl mash the avocado, cumin, salt and pepper.  Spread the avocado mash generously over the rye toast.  Cut each piece in half and top with radishes.  Serve!

Serves 6-8
