One of my Favorite Predicaments and Avocado Tofu Salad Spring Rolls

The other day I found myself in one of my favorite predicaments.

The type that involves a bag of avocados quickly getting too ripe.  Distraught by the possibility of letting even a single of those beautiful green gems go to waste, I reached out  to Messy Kitchen readers for ideas.  I quickly had three soup recipes, a pasta sauce, ice cream and the incentive to immediately go by another bag of avocados and let them become very ripe. 

I started my day off with a lovely green avocado smoothie for breakfast.

Put 1/2 avocado, 1 frozen banana, 1/4 light coconut milk, 1 T agave, 3/4 cup water and ice in a blender and voilà!

Guess what healthy green fat graced the top of my lunchtime?

You got it!  Sometimes I can’t believe that I went eighteen years not liking avocados.   Now, I could eat them with every meal!  Oh wait… I do.

Hello, delicious avocado spring rolls.  Strange and delicious love child of the many random ingredients one might find in the Messy Kitchen.

My staunch refusal to waste anything really does lead to some pretty neat discoveries.  But if you don’t happen to have rice papers in your cupboard, this avocado tofu salad would also be great in a pita, a tortilla wrap, or on top of a crunchy romaine salad, as I enjoyed it for lunch the next day.

 Avocado Tofu Salad Spring Rolls with Tahini Dipping Sauce

A Messy Kitchen Original

For the Spring Rolls:

  • 7 oz extra firm tofu
  • 1 ripe avocado
  • 1 tablespoon spicy mustard
  • 1 tablespoon dill
  • salt and pepper, to taste
  • 6 rice papers
  • shredded purple cabbage

Mash the avocado and tofu in a bowl.  Mix in mustard, dill, salt and pepper.

Fill a shallow bowl with lukewarm water.  Place one rice paper in the bowl and soak for 5-10 seconds. Carefully transfer the rice paper to a cutting board or large plate.  Spread with avocado mixture, top with shredded cabbage and carefully wrap.

For the Tahini Dipping Sauce:

  • 2 tablespoons tahini 
  • 2 tablespoons lemon juice
  • salt and pepper, to taste
  • enough water to thin to desired consistency

Combine all ingredients in a small bowl.
