Bacon Chive Waffle Sliders with Pulled Pork, Bacon and Maple Mayonnaise {Paleo and Gluten-Free}

Happy Waffle Day!  Yes, there is a designated holiday for every food imaginable.  Waffle day began in Sweden due to confusion between the Swedish words Vårfrudagen and Våffeldagen.  The former, “Our Lady’s Day” is celebrated nine months before Christmas.  I’ll let you do the math.  The latter, “waffle day,” historically marks the beginning of spring and is celebrated by the eating of many waffles.  Count me in!

It’s not as if I really needed an excuse to make these ridiculous bacon and chive waffle sliders stuffed with pulled pork, bacon and maple mayonnaise… but since you’re offering!

Seriously though, these things were absolutely ridiculous and very difficult to eat without grunting.  For the base, I used gluten-free waffles made with almond flour and studded with chopped bacon and chives.  Then I slathered each bun with a generous dollop of maple flavored mayonnaise.  Finally I topped it with a scoop of pulled pork, and of course more bacon.  And I served it with asparagus, because clearly I’m very health conscious.

I should also mention I nearly gave myself a concussion by clobbering myself in the temple with the waffle iron… and it was totally worth it.

Waffle Sliders with Pulled Pork, Bacon and Maple Mayonnaise

For the Sliders:

  • 1/2 recipe Paleo Pulled Pork (or your pulled pork of choice)
  • Maple mayonnaise (3/4 cup paleo mayonnaise + 1 tbsp maple syrup)
  • 1 recipe bacon waffles (see below)
  • 4 strips of bacon, cooked

Slather each side of the waffle buns with maple mayo.  Top with pulled pork and bacon and serve!

Serves 4

For the waffles:

  • 2 cups almond flour
  • ½ teaspoon baking soda
  • ½ teaspoon garlic powder
  • salt and pepper, to taste
  • 3 eggs, whisked
  • ½ cup canned coconut milk
  • 2 tablespoons bacon fat
  • 3 pieces of bacon, cooked and chopped
  • 2 tablespoons chives, finely chopped

Instructions:

  1. In a medium bowl, mix together almond flour, baking soda, garlic powder, and a bit of salt and pepper.
  2. In a small bowl, beat eggs with coconut milk and bacon fat.
  3. Combined wet ingredients with dry ingredients and fold in chopped bacon and chives.
  4. Heat up a waffle iron and pour mixture into the center of each waffle area. You want the buns to be small so only about 2-3 tablespoons of the mixture will do to create a small waffle bun.
