Banana & Berry Coconut Flour Paleo Pancakes

Sundays are a good day for pancakes.  On Saturdays, a protein bar has to do since we are usually hustling off to do a double (spin, chisel) at the gym starting at 9:00am.  But Sundays, we usually take as our rest day leaving time to make a real breakfast.  This morning was actually an exception.  We had a ton of fun with friends this weekend, but the cumulative food and drink I put in body did not agree with my tummy, and I had no desire for breakfast (not like me!)  We both woke up feeling awful, prompting a renewed pledge to eat healthy for the sake of our own productivity and well being.  Although they look decadent, these pancakes are grain and dairy free and won’t leave you feeling heavy or unsettled.  I’m already looking forward to taking care of myself next weekend, so I can wake up ready to devour a stack of these babies!

Banana & Berry Coconut Flour Paleo Pancakes

Ingredients:

  • 6 Tablespoons, Coconut Flour
  • 3 large eggs
  • 1 tsp baking soda
  • 2 tsp Vanilla extract
  • 1 cup, non-dairy milk of choice
  • 1 raw banana, chopped
  • 1 cup frozen berries (raspberries, blueberries, strawberries or a mix)
  • Syrup, for serving
  • Oil, for cooking.

How-to:

  1. Whisk eggs together in a medium bowl. Add in milk and mix again. Slowly add in coconut flour and baking powder and mix until combined.  Stir in bananas and berries, reserving a bit to top your pancakes with. Let batter sit for a couple of minutes to allow batter to thicken.
  2. Using a ¼ cup measuring cup, scoop batter onto a large greased skillet over medium-low heat. Cook for 3-4 minutes on each side, or until cooked through.  You will want to make the pancakes in several batches, depending on the size of your skillet.
  3. Top with fruit and syrup!
