Coconut Chai Chocolate Chunk Cookies

On snow days you’ll usually find me baking, and the most recent one was no exception.

I’d been to the gym, I’d written a blog post, I’d watched a full news cycle… what else was there to do but messy up the kitchen!?  God knows I’ll do anything to avoid cleaning up the house.  So I headed to my Pinterest boards to find a recipe that wouldn’t require a cold walk to the store.  Since I still had chai latte mix left from my ginger chai quinoa granola, plus half a large dark chocolate Santa in my freezer, this recipe immediately jumped out at me.

IMG_4589It’s par for the course that when I bake a batch of cookies, I generally eat at least 1/4 of the dough before it reaches the oven.  And I don’t think that this time was any exception.  The difference, however, was that while I usually am not all that into the cookies once they’re in their baked form, I just couldn’t get enough of these.

IMG_4624I absolutely adored the texture, super chewy and almost like an oatmeal cookie thanks to the coconut.  The flavors melded wonderfully, and they were quickly polished off by the Takeout Tuesday crew (or, erm, mostly by me).  I only wish I’d hidden a few!

Coconut Chai Chocolate Chunk Cookies

From Beyond Frosting

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 cup Trader Joe’s Chai Spice Latte mix
  • 1/4 cup honey
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 3/4 cup all-purpose Flour
  • 2 tsp Baking powder
  • 1 tsp Salt
  • 1 tsp cinnamon
  • 1 cup chocolate chips or chunks
  • 1 cup unsweetened shredded coconut

Instructions:

  1. Combine butter, sugar and chai mix and beat on medium speed until well creamed together.  Mix in egg and vanilla.
  2. In a separate bowl, combine flour, baking powder, salt and cinnamon.  Slowly add into batter and beat on medium low speed until well combined.  Add chocolate chips and coconut and mix to incorporate.
  3. Spoon heaping tablespoons of dough onto a greased cookie sheet. Bake at 350° F for 12-15 minutes until lightly golden brown.

Makes 24-30 cookies
