Day After Thanksgiving Turkey Quesadillas

One of the upsides of being the type of hostess that cooks enough food for three times as many people as she has coming for Thanksgiving dinner is the mass amounts of leftovers.  It’s not like I could have helped it anyways.  I mean really, no one should be limited to only one stuffing option on Thanksgiving day.  But I must admit, leftovers are as much anticipated a part  of the holiday as the main meal itself.

I mean, first you have these babies.  Everyone knows the beauty of the Day After Sandwich.  And really, mine put The Bobbie to shame.  But even after having friends over Friday night to make these day after sammies, we still had quite a bit to work with.

First up, I bring you the Day After Quesadilla.  I just ate breakfast, and looking at that makes me hungry.

I tried making these two ways, the first with stuffing and the second with sweet potato, both with cranberry sauce, turkey and mozzarella.  My personal favorite was the one with stuffing; it worked best texturally, and let’s be honest, stuffing is kinda my jam.  But you could certainly also use garlic mashed potato, or even try it with all three!  The world refrigerator is your oyster quesadilla.

Day After Thanksgiving Turkey Quesadillas

Ingredients:

  • 2 medium tortillas (I use Trader Joe’s low-carb)
  • 2 oz Shredded mozzarella
  • 2-3 oz leftover turkey diced or ripped apart
  • 2 T Cranberry Sauce
  • 1/4 cup stuffing and/or mashed sweet potato
  • Gravy for dipping sauce

Instructions:

  1.  Spray a skillet with cooking spray and heat tortilla over medium heat.
  2. On one side, spread cranberry sauce.  Don’t go overboard, as the cranberry sauce flavor can be overpowering.  Layer with turkey.
  3. On the other wide, spread stuffing or sweet potato (or both!) and top with shredded mozzarella.
  4. Allow to heat through before carefully folding over.  Cook for a few minutes on each side.
  5. Serve with gravy dipping sauce!
