Easy Homemade Fudgsicles… with Avocado! (Vegan, Paleo)

This post probably should have been called “unflattering pictures of my friends eating fudgsicles, but I was worried no one would read it if I called it that.  Or that all the wrong people would read it.  I’m not sure what’s worse.

Okay, that was kind of mean.  Here’s a really unflattering selfie of me eating a fudgcicle, because it’s only fair.

These are great, because they are super quick and easy to make.  When I found out Food For Life wouldn’t be offering the flourless chocolate cake for our Takeout Tuesday, I decided to whip these up for my guests.  These are a great way to satisfy a sweet tooth or a chocolate craving in a nutritious way!  For anyone who is skeptical about avocado in a popsicle, don’t be.  I often add avocado to desserts, especially with chocolate.  It makes them creamy and lends healthy fats, but you likely wouldn’t even pick up on the flavor.  When I asked my friends to guess the ingredients, it was the one ingredient no one guessed.  On the other hand, if you want the avocado to come through more, you can make these without the cocoa powder.

Avocado Fudgsicles

  • 1 large avocado
  • 2 1/2 cup nut milk of choice (I used 1 cup canned light coconut milk and 1 cup almond milk)
  • 1/2 cup liquid sweetener of choice (agave, maple syrup, honey)
  • 1/3 cup quality dark cocoa power

Combine all ingredients in a food processor or blender.  Pour into your popsicle mold and freeze!
