More Fun with Leftovers: Turkey and Cranberry Panini with Avocado and Mozzarella

Seriously though, Courtney and I simply couldn’t go a bite without grunting its praise.  I decided to make these sandwiches on a whim, having planned to make another batch of day after quesadillas.  We had four slices of sour dough left, and an avocado that was quickly approaching the end of its life here on Earth.  So it just so turns out it was fate: this quite literally might have been the best sandwich I have ever eaten in my entire life.  It was definitely in the top ten.  In fact, I may need to go out and get another loaf of sour dough.

Turkey and Cranberry Panini with Avocado and Mozzarella

Ingredients:

  • 4 slices of sour dough bread
  • 1/2 avocado
  • 4 oz thick cut turkey (white meat), reheated
  • 4 oz shredded mozzarella
  • 3 T cranberry sauce
  • 2 T light mayo

Instructions:

  1. Spray your panini press or griddle and heat over medium-high heat.
  2. Slather two slices of sour dough with mayo and the other two with cranberry sauce.  Place on griddle.
  3. Layer one side with turkey and the other with avocado.  Cover both generously with shredded mozzarella.  Allow to toast for a couple of minutes.

  4. Flip one side of the sandwich onto the other, press and cook until the bread is golden brown and the cheese is nice and melty!
