Paleo Pizza Frittata (Whole30 Friendly)

Pizza in the morning, pizza in the evening, pizza at supper time… except ditch the bagel.  Who needs those empty calories?  We’re talking pizza frittata here, packed with veggies and topped with pepperoni.  This is a delicious protein-packed way to start or end your day!

Paleo Pizza Frittata

Adapted from Jay’s Baking me Crazy

Ingredients:

  • 1 tbsp olive oil
  • 8 large eggs
  • ¼ cup light coconut milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon dried oregano
  • 1½ cups mushrooms, sliced
  • 16 slices pepperoni
  • 1 small yellow onion
  • 1 green bell pepper
  • 1/4 cup pizza sauce
INSTRUCTIONS
  1. Preheat the oven to 375° and grease an 8×8 baking dish.
  2. Heat 1 tbsp olive oil in a large skillet.  Add onions, peppers and mushrooms and cook for about 7-10 minutes.
  3. Meanwhile, crack the eggs into a bowl and add the coconut milk. Add all seasonings and whisk until well combined.
  4. Transfer the veggies to the greased pan.  Pour egg mixture over veggies and swirl the pizza sauce on top.
  5. Finish with rows of pepperoni.
  6. Bake for 25 minutes.  Switch the oven to broil and cook an additional five minutes, careful not to burn.
