How I’m Coping Without Godiva: Raw Vegan Carrot Cake Truffles

During a recent trip to Godiva to get my monthly free truffle, the gentleman behind the counter alerted me that the perk was soon to be no more.  “It’s too popular,” he said (i.e. “everyone who uses it is just as cheap thrifty as you are and comes in every month to get their free truffle without every buying anything else).  I haven’t actually found any evidence to substantiate his claim, but I’m no longer sure I care.  This weekend I made some of the best truffles I’ve ever tasted in my life.

And they’re made with nothing but all-natural healthy ingredients.

Raw Vegan Carrot Cake Truffles

Adapted From the Urban Poser

(Grain Free/Gluten Free/Dairy Free/Vegan/Raw)

Ingredients:

Note: Use the measurements below as a guide.  You may need to alter to reach your desired consistency and to ensure that the cake balls hold together.

  • 3 carrots
  • 1 large apple, cored
  • 1/2 cup yellow raisins)
  • 1/2 cup dried shredded coconut
  • 1/2 tsp ground cinnamon
  • 2 Tbls agave
  • 2 Tbls almond butter
  • 1/4 cup raw almonds
  • 1/4 cup coconut oil
  • 3 Tbls  maple syrup
  • 1/2 tsp vanilla
  • 7 Tbls of raw cacao powder

Directions:

  1. Grate the carrots and the apple in a food processor. Press out as much juice as possible by using a fine sieve, strainer or cheese cloth*.
  2. Return pulp to the food processor, and add remaining ingredients through almonds and allow to process for a couple of minutes.
  3. Roll the dough into balls (about 1 Tbls worth of dough) and chill in the freezer for 30 minutes to an hour.
  4. Meanwhile, prepare the chocolate: Combine room temperature (liquified) coconut oil, vanilla, maple syrup and cacao in a small bowl.  Whisk together until well-combined with no lumps.  Let sit while balls harden.
  5. Using a wood skewer or a couple of toothpicks, carefully dip the frozen cake balls into the chocolate and spin to cover.  Set aside on a sheet of wax paper.  Chocolate will harden quickly, so if adding any garnishes you must add right away.

*The Urban Poser said that you can also use a juicer  to squeeze out the juice, but that there is much more flavor to the cake ball when made by hand.  I definitely want to try this, as I hate wasting the pulp when I made juice!

Makes approx. 15-18 cake balls depending on your ingredients and size of the cake ball
