Skinny Lime Shrimp & Avocado Salad

The last recipe I brought you was quite complicated.  This one is not!  In fact, this is different from that recipe in just about every way possible.  This isn’t a dessert laden in bacon, chocolate and booze, but instead a light lunch option low in calories and carbohydrates.  Because sometimes you have to offset bourbon bacon chocolate pie with something healthy.  It’s all about balance!

Lime Shrimp & Avocado Salad

Ingredients:

  • 1/4 cup chopped red onion
  • 2 limes, juice of
  • 1 tsp olive oil
  • 1/4 tsp kosher salt, black pepper to taste
  • 1 tsp cumin (optional)
  • 1 lb jumbo cooked, peeled shrimp
  • 1 medium tomato, diced
  • 1 medium hass avocado, diced
  • 1 jalapeno, seeds removed, diced fine
  • 1 tbsp chopped cilantro
  1. In a small bowl combine red onion, lime juice, olive oil, cumin, salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.
  2. In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
  3. Serve over mixed greens with a boiled egg for extra protein, if desired!
