Sweet Potato Pie… for Breakfast!

I’ve always considered pie to be an appropriate breakfast food, although perhaps not one you should have everyday.  It was a treat to be saved for Grandma’s house, the day after Christmas or Thanksgiving, or for the even rarer occasion that a slice of the pie Papa brought over every Wednesday night make it to see Thursday morning.

Well, this right here tastes just like sweet potato pie, but you can definitely feel good about incorporating into your regular breakfast lineup.  Sweet potatoes are a complex carbohydrate, packed with vitamins, potassium, iron, and fiber.  This pie is packed with protein and the almond butter also delivers some good healthy fat.

Sweet Potato Protein Pie

Ingredients:

  • 1/2 medium sweet potato or one whole sweet potato (~4 oz)
  • 1/4 cup cake batter protein powder (vanilla would also do and I haven’t tried it yet, but I bet cinnamon swirl would be amazing!)
  • Splash of almond milk (or milk of choice)
  • 1 T almond butter
  • Cinnamon, for sprinkling

Directions: Bake or microwave sweet potato until soft.  This can be done the night before.  Remove flesh, and set the skin aside (try to keep it intact).  In a blender or food processor, combine protein powder, sweet potato and splash of almond milk.  Mix well and return to the skin.  Garnish with almond butter and cinnamon and enjoy!
