Sweet & Savory Blueberry Tortilla {Whole30}

While this may look like a giant fluffy blueberry pancake… it’s not.  Unfortunately even paleo pancakes aren’t permitted during the Whole30.  This right here is more like a Spanish tortilla, with blueberries instead of potato.  The coconut aminos add a nice umami flavor.  Yes, you’re really supposed to have some veggies on every Whole30 plate, but this sure was delicious topped with bananas and coconut!

Sweet & Savory Blueberry Tortilla

Ingredients:

  • 1 large spoonful of ghee (clarified butter)
  • 4 eggs
  • 1 Tablespoon Coconut Aminos
  • 1 teaspoon cinnamon
  • 1/2 cup blueberries

Directions:

  1. Crack the eggs into a bowl and scramble with the coconut aminos and cinnamon.
  2. In a small nonstick skillet over medium heat, add the ghee and bring up to temperature.
  3. Pour the eggs into the pan and allow to cook for 2-3 minutes undisturbed. Sprinkle the blueberries onto the eggs. IMG_4951
  4. Cook for about 6-8 more minutes on low. Throughout that time, using the edge of a spatula, lift up the tortilla (eggs) and allow some of the liquid eggs to flow underneath. When most of the egg is cooked through, confidently flip the tortilla!
  5. Remove the skillet from the heat and put a large plate upside down on top of the skillet. Quickly flip the skillet over and the tortilla will fall out onto the plate.

Serving suggestion: Serve topped with banana, shredded coconut and a bit of coconut milk and drizzle with some more coconut aminos!

I am telling EVERYONE about this recipe! It is so stupid good, and so easy to make. I ended up adding one more egg than planned (accidental break), and it was still yummy!
