Vegan Golden Milk Overnight Oats {featuring turmeric, ginger, cardamom and honey}

I’ve been on an overnight oats kick lately.  When it’s 90 degrees and humid and your air conditioning unit has decided to completely die, it’s hard to want something warm in the morning.

Note to self: chill coffee for tomorrow morning.  

There are a thousand ways to make overnight oats, but my new “go to” is 1/2 cup of oats, 1 tbsp flaxseeds, 1 tbsp chia seeds, 1 cup almond milk, cinnamon and vanilla; shake it in a mason jar, let it sit overnight and top it with fruit and honey!  That’s about as simple as it gets.

But sometimes it’s fun to get creative!  For this recipe you need to make the golden milk first, which isn’t very difficult; it’s just a matter of mixing some spices, nut milk and your preferred sweetener. The “golden” comes from the turmeric, which may sound like an odd addition to your oatmeal but is actually lovely as part of this spice blend.

Vegan Golden Milk Overnight Oats

Golden milk:

  • 2 tablespoons maple syrup or agave
  • 1 teaspoon ground turmeric
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cinnamon
  • 2 cups plant milk (I used almond milk)

In a mason jar or small bowl, combine the maple syrup, turmeric, ginger, cardamom, and cinnamon.  Add the almond milk and shake/stir until well combined.

Overnight Oats:

  • 1⅓ cups dried oats
  • 2 tablespoons chia seed
  • 2 tablespoons flax seed
  • 1 ½ cups golden milk (above)
  • fresh fruit and maple syrup/agave, for serving

Combine oats, chia, and flax seeds in a mason jar, stirring or shaking to combine. Pour the golden milk into the jar and stir or shake to combine. Chill overnight or up to 3 days. To serve, top with fresh fruit and maple syrup or agave, if desired.

Serves 2 (with golden milk to spare!)
