Whole30, Day 28: If You Can be Compliant at the Cracker Barrel, You Can Be Compliant Anywhere

When I think Cracker Barrel, I think of foods about as far from Whole30 compliant as you can get: chicken fried chicken, biscuits and gravy, fried apples…  all the things my husband had for breakfast this morning.  But I was able to put together a compliant meal fairly easily, opting for four eggs over easy with sliced tomatoes and a side of apples.  You won’t find it on the menu, but believe it or not they don’t have to put gravy on everything.  By the time we got home I was starving, having had far fewer carbs and healthy fats than I’ve gotten used to eating at home.  So I made us giant plates of what just might have become my new favorite dinner: plantain nachos with chili, chipotle salsa and homemade guacamole.  We certainly won’t be taking this off the menu anytime soon, Whole30 or no Whole30.

According to the Whole30 Timeline I should be feeling:  28 days is as good as 30… right?  What benefit could two more days bring you?

How I’m feeling: While physically I’d generally agree that two more days isn’t  going to make much of a difference, I have absolutely zero thoughts of throwing in the towel.  But let’s be honest, I never once have had thoughts about throwing in the towel.  From day one, giving up was not an option.  When I say I’ll do something, I do it.  It would have taken a truly once in a lifetime event for me to quit.  Unless Michelle Obama invited me over to the White House for homemade muffins I wasn’t going to quit.

Snack: A banana.  I felt like I was going to pass out from hunger, so I started the morning with a road banana!

Breakfast:  Cracker Barrel!  Four eggs over easy with sliced tomato and apple slices.  They don’t have to put gravy on everything!

Lunch on the Road: A Cashew Cookie Lara Bar.  Lara Bars are compliant, but meant for emergencies, not as a regular snack while on the Whole30 because they crowd out “real” food and can be abused as sweet treats.  This was the first one I’ve had since I started, and I bet it would be easy to make at home!

Dinner: Plantain Nachos with Chocolate crock pot chili, Guacamole, Salsa and a Salad.  (This is hands down my new favorite meal!) photo-56
