Whole30, Day 3

This morning I found myself already getting a bit sick of eggs.  On day three?!  That could be bad news bears. But having had an omelet as a pre-workout snack, immediately followed by frittata cups for dinner and then a hard-boiled egg for a morning pre-workout snack immediately followed by more frittata cups, perhaps it’s no wonder.  And any of the food boredom I was experiencing earlier in the day… well, dinner tonight put the kibosh on that right quick.  Oh my goodness, if you’ve never made coconut mashed plantains you really should go make them right now.  Don’t even finish reading my post.  Just go.  And serve them with pulled pork and avocado.  Whole30 or no Whole30, that shiz is delicious!  Even Courtney, who was a bit skeptical of my diet plan to begin with, commented “I feel good eating this.  Like, I could eat this every day.”  Amen.

How I’m feeling:  Still no hangover!  Had lots of energy today.

Pre-workout Snack: Hard boiled egg and spoonful of almond butter
