Yummy Things I’ve Eaten Recently & Finding a Post-Race Workout Routine

Remember when I blamed not writing much on triathlon training? Yeah, well that was a bunch of shit. I’m just not writing much.

So what have we been up to post Ironman 70.3? Well, we’ve gotten back into our normal workout routine which is refreshing. I actually always feel like I’m in better shape when I’m not training for a race. I put in about the same number of hours per week, but distributed in a much more balanced way. We’ve ditched the swimming and long bike rides and have been doing more fitness classes. My weekly routine has been 2-3 spin classes, 2-3 runs, 2-3 strength sessions and a yoga class.

All that said, we’ve already signed up for a couple more races! The Philadelphia Rock ‘n Roll 1/2 Marathon + we joined a Ragnar team! The 200+ mile 36+ hour relay race has long been on my bucket list so I’m pretty excited. Our goal is to maintain our running distance so we don’t have to start from scratch in the fall.

Otherwise, it’s been the standard summer stuff: celebrating my birthday for a month and partying on boats and rooftops. You know, adulting.

Okay, let’s get to the noms…

Smokehouse Fish Board from Ivy City Smoke House

I saw this on Instagram and knew I had to have it. Yes, that actually happens. But in this case, it was sooo worth it. The fish board comes with three types of smoked salmon, smoked trout, smoked white fish, two toasted bagels, chive cream cheese, creamy horseradish, and all the fixins. And it’s an absolute dream.

I requested this cake for my 30th birthday, and it was probably the best birthday cake I’ve ever had. This year, I settled for just a slice, and it lived up to my memory every bit of the way. I don’t even care that it cost $9.

Almond butter turmeric salad dressing from Trader Joe’s

New favorite salad dressing alert! And it’s surprisingly natural: water, almond butter, lemon juice, ginger puree, cane sugar, garlic, sea salt, lemon zest, ground turmeric, and black pepper. Next step is to recreate it at home!

Shrimp Toast at Rose’s Luxury

There’s always one dish at Rose’s that I don’t have high expectations for, and then just totally blows me away. This time it was the shrimp toast. And really, how can I be surprised when it comes on their homemade brioche?

Cheesy Broccoli & Chicken Stuffed Peppers

I make a lot of different stuffed peppers, but these ones are pretty great. I used this recipe, but used four whole peppers rather than dividing three in half. I also used farro instead of rice and feta instead of cheddar.

The best part of this clam chowder? Eating the bowl. Oh, and the delicious fried clams on the side.

Cozymeal’s Chef Gustavo’s take on Venezuelan Arepas

I was going to write you a whole post about our wonderful South American cooking experience with Chef Gustavo, but I got lazy. So I’ll just leave you with a picture of this delicious arepa instead.

And my healthy take at home (which I actually made first!) Courtney bought this edamame spaghetti at Costco not even realizing how healthy it is. But at 24 g protein and 13 g fiber per serving it’s on par with the Know Foods pasta I told you about, and wayyyyy cheaper.  This right here was a quick delicious meal, and one that I should probably recreate.
