1/2 cup unsweetened shredded coconut
1/2 cup bread crumbs or panko
salt and pepper
1 egg
1 lime cut into wedges
1/4 cup coconut oil

Confession: before last week, I wouldn’t have been able to tell you that Nauru was a country.  But it is! A tiny island nation in Micronesia, northeast of Australia.  I was even more surprised to learn that Nauru is the smallest country in the world, but also the fattest nation on Earth!  The tiny population of under 10,000 people has an average BMI of 34-35 and a whopping 94% of Nauruans are overweight. The soil has been stripped bare from phosphate mining, meaning very little plant life survives on the once fertile land; coconut and pandan fruit are among the few survivors.  Instead, the majority of the food in Nauru is shipped in every six weeks, so residents rely heavily on the import of highly-processed Westernized foods.  Spam-fried rice is another common delicacy, but can you blame me for going with the fish?

Sprinkle the fillets with salt and pepper.

In one shallow bowl, combine the coconut and bread crumbs/panko. In a second, beat the egg.

Take a fillet and dip both sides in the egg. Next, coat in the coconut mixture, gently patting the mixture onto the fish to make sure it's covered well. Set aside and repeat with remaining fillets.

Heat the oil in a large skillet. Fry the fish for about 3 minutes on each side, or until cooked through (this will depend on the thickness of your fish). Depending on the size of your pan, you'll probably need to do this in batches. Serve with lime wedges to squeeze over the fish.
