Sweet Potato & Chicken Sausage Hash {Whole30}

As I’ve mentioned before, food prep is key to a successful Whole30.  This is especially true about breakfasts, since we’re often in a hurry in the morning and many of our quick ‘grab and go’ breakfasts (protein bars, granola, yogurt, cereal, oatmeal) are all off-limits limits during a Whole30.  This sweet potato and chicken sausage hash is a great dish to make a big batch of to have on hand all week.  All you have to do is throw it in the microwave.  While it’s in the microwave, fry up an egg to throw on top and serve along with some avocado and a side of veggies.  Think you don’t have time to fry an egg?  Yes you do.  It takes two minutes.  Set your alarm five minutes earlier and you’ll be good to go.

Sweet Potato & Chicken Sausage Hash

Ingredients:

  • 2 lbs sweet potatoes,cut into 1/2″ cubes
  • 2-3 Tbsp olive oil
  • 1 large onion, chopped
  • 1 12 0z package chicken sausage, chopped (I used Aidell’s chicken and apple)
  • 1 Tbsp  chili powder
  • 1 Tbsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • Dash of cayenne pepper
  • Salt & pepper, to taste

Instructions: 

  1. Preheat the oven to 400.  Toss sweet potato cubes in a bowl with 2 Tbsp olive oil and the spices.  Spread them on your cookie sheet in a single layer.  Roast for 40 minutes, stirring once so they brown more evenly.

  2. Meanwhile, heat 1 Tbsp olive oil in a medium skilled and cook the onions until soft.  Add the chicken sausage and cook until browned.

  3. Once everything is done cooking, combine sweet potatoes and sausage onion mixture in a large bowl.  Serve topped with a fried egg with a side of avocado!
